"About sushi culture, such as Edomae, Osakamae, and Hakatamae."
"What does 'seasonal' mean from the perspective of food culture?"
"No knife needed! Easy way to prepare fish"
Takuya Hikita majored in marine biology and, after graduating from university, gained over 10 years of experience as an auctioneer at Tsukiji Market. He is now a fish expert supplying delicious and diverse Japanese fish to the Vancouver area.
